The invention relates to nanoparticles comprising a casein matrix, a basic amino acid and a metal selected from among a divalent metal, a trivalent metal and combinations of same. Said nanoparticles can encapsulate a biologically active water-soluble or fat-soluble compound. The invention is suitable for use in the food, pharmaceutical and cosmetic sectors, as well as in nanotechnology.
