The invention relates to a machine (10) for producing pressed cheeses which consists of a rotatable device having a carousel, along a horizontal axis (11), of a plurality of pressing units mounted on a rigid hub (16) which supports one or more actuators (17), each having a piston cover (18) mounted thereon, said piston cover being in contact with a removable mould (19). The pressing is exerted against an abutment profile (20) secured to one of the removable segments (21) that make up an outer belt. Operations, including cleaning in place, are automated, with ergonomic manual assistance during filling and removal from the mould. It is possible to press cheeses having diameters of 100 mm to 820 mm, either from the bottom or from the top, and the machine can be provided with one, two or three working surfaces, which ensures high productivity and flexibility. |
