The present invention relates to an apparatus for removing astringency of a persimmon and an astringency removing method thereof, and more specifically, to an apparatus for removing astringency of a persimmon, which provides carbon dioxide to an astringency removing room, performs removal of astringency, and senses and controls carbon dioxide concentration to be reused when recovering the used carbon dioxide and reusing the same, and to an astringency removing method thereof. According to the present invention, by recovering and reusing carbon dioxide used in removal of astringency, the usage of carbon dioxide used in removal of astringency can be minimized. Also, efficiency of removal of astringency can be stably maintained by obtaining a means for controlling proper concentration for removal of astringency when reusing carbon dioxide which is recovered after removal of astringency.
