In a process to manufacture e.g. chocolate, a viscous mass of food is pumped into a mould. The novelty is that: (a) a tempered die (5) is submerged in the mould (9) and the mass is extruded; and (b) the dew point of the atmosphere around the food is kept below the die (5) temperature. <??>Also claimed is a suitable assembly. |
