The present invention relates to a heat stable glutamate decarboxylase B variant. Specifically, the glutamate decarboxylase B variant of the present invention is a mutant to which two or more amino acid residues among 5-7^th amino acid residues from N-terminal of a normal glutamate decarboxylase B (GadB) are substituted with other amino acids; has more stable enzymic activities and an active site at high temperatures than the normal glutamate decarboxylase; and can produce large amount of γ-aminobutyrate (GABA) through a mass producing system.
