Beer artificially enriched with carbon dioxide is sterilized by heating, e.g. at 70-100 DEG C., under a pressure, e.g. 10-15 atmospheres, which exceeds the saturation pressure of the carbon dioxide at the temperature employed, the beer being passed during the treatment over a bactericidal metallic surface. The enrichment of the beer may be effected by injecting carbon dioxide into the preheated or hot beer during the sterilizing process. The pressure of the sterilized beer may be gradually reduced so that it leaves the sterilizing apparatus under normal pressure.
