摘要 <p>The present invention relates to a method for producing yogurt including a Pediococcus pentosaceus AYO-1 (KCCM11355P) strain having an ornithine production capacity and to anti-obesity yogurt having effects in detoxifying ammonia, relieving fatigue, and improving skin texture. The method comprises: a) a mixing step of mixing raw oil with sugar; b) a sterilizing step of sterilizing the mixture at low temperature of 90-95°C for 10-15 minutes; c) a cooling step of cooling the sterilized mixture to 40-45°C; d) an inoculating step of inoculating the cooled mixture with 1-2% (v/v) of functional lactic acid bacteria and industrial starters; e) a fermenting step of fermenting the inoculated mixture at 40-45°C for 0-4 hours; f) a packing step of cooling the fermented liquid to 10-15°C and packing the same; and a storing step of storing the packed yogurt at -1-5°C.</p>
