PROBLEM TO BE SOLVED: To provide a puffy and tasty pouched retort cooked rice, with prevention of rice from being collapsed or from sticking to the lower part of a pouch, having a texture different from that of a rice dumpling wrapped in bamboo leaf and a good flavor, with rice grain having smooth surface.SOLUTION: The pouched retort cooked rice includes a pouch filled with raw rice and water for rice cooking, with a head space provided, which is sealed and retort sterilized. The rice has a void ratio in the range of 25 to 50%. The rice stuck to the lower face of the pouch has an area ratio in the range of 50 to 70%. |
