The invention relates to a method for encapsulating a solute in micelles in aqueous phase, characterised in that it comprises: (a) dissolving the solute in an organic phase and at least one encapsulating surfactant material in the aqueous phase and/or the organic phase; (b) forming an emulsion with the aqueous phase as a continuous phase and the organic phase as a discontinuous phase, in which the organic phase comprises an organic solvent that is immiscible or partially miscible with water, defining an organic solvent having a water solubility of less than 15 mass-%; (c) extracting the organic solvent from the emulsion with a supercritical fluid; and (d) eliminating the supercritical fluid by means of decompression, producing a micellar solution in which the solute is solubilised and stabilised in water inside the micelles formed by the encapsulation material. The invention also relates to the system used to carry out said method.
