摘要 <p>The present invention relates to a method for manufacturing fermented enzyme of Sparassis crispa, comprising: a step for preprocessing Sparassis crispa by washing, drying, and finely cutting Sparassis crispa (S100); a step for fermenting the preprocessed Sparassis crispa by mixing an extract of Dendropanax morbifera and glycogen (S200); a step for filtering the fermented mixture (S300); and a step for aging the filtered fermented mixture at 18-25°C for 20-60 days (S400) and the fermented enzyme of Sparassis crispa manufactured by the method. In a case of preparing fermented enzyme of Sparassis crispa using the manufacturing method of the present invention, the glycogen promotes the extraction of active ingredients, thereby enhancing the workability for manufacturing the fermented Sparassis crispa, improving pharmacological ingredients, taste, and scent of Dendropanax morbifera and Sparassis crispa, and increasing the storage period. Also, the pharmacological ingredient of Dendropanax morbifera is transferred to provide the fermented enzyme of Sparassis crispa having effects of antioxidative activity, liver function improvement, osteoporosis treatment, and immunity enhancement as well as physiological activities of Sparassis crispa. Additionally, the fermented enzyme of Sparassis crispa manufactured by the present invention can be used for various health functional foods catering to modern people′s tastes.</p>
