Novel inverse latices comprising, as inverting agents, at least one compound of formula (I): R3—[O—CH2—CH(OH)—CH2]P—OH (I) in which R3 represents a linear or branched aliphatic radical comprising from 6 to 18 carbon atoms and p an integer greater than or equal to and less than or equal to 20; and cosmetic, dermocosmetic, dermopharmaceutical or pharmaceutical compositions comprising them.
