摘要 <p>The present invention relates to a manufacturing method of tangsuyuk and, more specifically, to a manufacturing method of healthful tangsuyuk with an excellent texture, which comprises a material preparation step of cutting meat and preparing batter flour, seasoning and sauce materials; a thistle extract manufacturing step of adding thistles in water and decocting to obtain a thistle extract; a seasoning step of mixing the cut meat with the thistle extract and seasoning; a batter manufacturing step of mixing the batter flour including sweet potato starch with the seasoned meat to dredge the meat; a deep-frying step of frying the battered meat in oil and removing the oil residue in the fries; and a sauce supply step of manufacturing a sauce from the sauce materials and supplying the sauce. According to the present invention, tangsuyuk uses sweet potato, which is good for health due to abundant nutrients such as potassium and vitamin, abundant fibers and low calories, and a thistle, which is known as good for liver functions, blood circulation and stamina, thereby being good for digestion and helpful in diet, allowing to the characteristic taste of sweet potato, and improving health. Furthermore, the manufacturing method of the present invention prevents fries from being hard or soaked, and maintains a crispy texture of tangsuyuk, and the original meat texture by adding a small amount of potato starch to the sweet potato starch as batter flour.</p>
