摘要 The present invention relates to a method for producing steamed alcohol bread, wherein the method comprises the steps of: (1) mixing a main ingredient including wheat flour with a sub ingredient including sugar, salt, and baking powder and adding makkoli (Korean rice wine) in the mixture to knead the mixture; (2) dividing the dough and adding red bean dregs to mold the dough in a ball shape; (3) putting the molded product in a steamer to firstly ferment the same at 39 to 42°C for 15 to 25 minutes, secondly ferment the same at 47 to 48°C for 6 to 10 minutes, and thirdly ferment the same at 49 to 52°C for 13 to 20 minutes; and (4) steaming the fermented product in a steamer at 90 to 110°C for 20-25 minutes. In the method according to the present invention, time taken to produce steamed alcohol bread can be reduced compared to an existing method, and the steamed alcohol bread produced by the method of the present invention has a large size and increased moisture so as to provide excellent chewing textures and prevent aging. Accordingly, more excellent steamed alcohol bread can be provided to consumers.
