PRODUCTION OF TAGATOSE FROM FRUCTOSE USING L-RIBULOSE 5-PHOSPHATE 4-EPIMERASE

The present invention provides novel use of L-ribulose 5-phosphate 4-epimerase as fructose 4-epimerase and a method for producing tagatose from fructose using the same. The 5-phosphate 4-epimerase is derived microorganisms selected from a group consisting of Acido thermos cellulolyticus, Lactobacillus casei, Bacteroides xylanisolvens, and Lactobacillus reuteri. If the method for producing tagatose from fructose is optimized by using the 5-phosphate 4-epimerase, tagatose can be produced from fructose, which is inexpensive.
