FROZEN INSTANT TAPIOCA PEARLS AND METHOD FOR MANUFACTURING THE SAME

A method to prepare a frozen instant tapioca pearl (22) comprises the steps of: (a) preparing a raw material tapioca pearl (20); (b) cooking the raw material tapioca pearl (20) to obtain the cooked tapioca pearl; (c) dipping the cooked tapioca pearl in a high-temperature aqueous solution; (d) cooling the cooked tapioca pearl using ice water after step (c); and (e) blowing chilly air having a temperature of -5 to -40°C onto the cooked tapioca pearl at a wind speed of 3 to 5 m/s under a wind pressure of 500 to 1,000 Pa, and then separating and quick-freezing the cooked tapioca pearl.
