<p>The present invention relates to rice noodles using bamboo and a method for making the same, and more specifically, to a method for making rice noodles, comprising the steps of: mixing starch and wheat flour with rice flour to obtain a mixture; adding kneading water in the mixture and performing kneading to obtain dough, wherein the kneading water is obtained by putting bamboo leaves in an extract obtained by mixing purified water, a smoked bonito powder, dried pollack, kelp, onions, and salt, followed by extraction; extrusion-molding the dough to obtain a molded product; steaming and aging the molded product; and drying the aged molded product, and to rice noodles made by the method.</p> |
