PROBLEM TO BE SOLVED: To provide a protein collecting method enabling collection of prolamine in the rice with high purity and high yield.SOLUTION: The method of the invention comprises a protein solubilizing step in which an alkaline solution and an alcohol solution are added to the rice to solubilize proteins, and a protein isolation step in which the supernatant obtained in the protein solubilizing step is neutralized with acid to precipitate alcohol-insoluble proteins other than prolamine.
