PROBLEM TO BE SOLVED: To provide methods that can obtain lipid-soluble pigment compositions derived from citrus fruits such as &bgr;-cryptoxanthin or &bgr;-carotene expected as functional materials from unused resources such as citrus fruits waste easily and effectively.SOLUTION: Lipid-soluble pigment compositions derived from citrus fruits such as &bgr;-cryptoxanthin or &bgr;-carotene can be obtained easily and effectively without going through complicated steps by using residue containing pulp component discharged from citrus fruit juice manufacturing process as raw material, and by extracting the lipid-soluble pigment compositions with alcohol extraction.
