<p>PROBLEM TO BE SOLVED: To solve problems in that residue produced during frying tends to occur on an oil surface, in the middle, and on the bottom in a frying device, it is preferable for residue to be quickly removed for fried food, it is required to reduce deteriorating substance, resulting from, for example, oil deterioration due to residue, dissolution of oxygen in oil, or an increase in deteriorating substances resulting from frying, leading to various problems such as poor taste of fried food, an increase in oil replacement frequency, and an increase in waste oil.SOLUTION: The object of a frying device is solved by: (1) a circulatory filtering device connected to an opening of a wide width as of a belt, the opening being composed of a devised tube and case: and (2) operation control of them. (1) makes it possible to section an oil tank required for frying, to limit an area for high temperature oil, and to provide an air duct at an oil tank low temperature area, thus eliminating the need for welding in the device. Sectioning by the tube to provide a water area makes it possible to use a pipe structure for a framework for the frying device, and also makes it possible to use plastic. Also, the device is of an assembly type, can easily be constructed, and controls these fitments in cooperation. The above configuration exerts control for the reduction of deteriorating substances in the oil tank to solve the problem.</p> |
