A method for performing starch liquefaction in a slurry comprising starch and phytate, the method comprising contacting the slurry with a thermostable phytase selected from BP-110 (SEQ ID NO: 3), BP-111 (SEQ ID NO: 4), and BP-112 (SEQ ID NO: 5); and an alpha-amylase derived from Bacillus licheniformis or Geobacillus stearothermophilus; under primary liquefaction or secondary liquefaction conditions, wherein the presence of the thermostable phytase increases the amount of starch liquefaction compared to an equivalent process in the absence of the phytase.
