PROBLEM TO BE SOLVED: To provide a grease composition for non-lauric, non-trans coating chocolate endowed with attributes demanded for coating chocolate applications such as the drying time, glossiness, resistance to peeling from a coating target, and perspiration resistance and capable of yielding a novel composite food having a soft texture unachievable by grease compositions of the prior art for coating chocolate.SOLUTION: The provided grease composition for non-lauric, non-trans coating chocolate not only includes a grease having a rising melting point of 35°C or more and having a specified fatty acid composition but also has a specified triglyceride composition. |
