PROBLEM TO BE SOLVED: To provide a gelling agent including a new compound for gelling a liquid state organic substance. SOLUTION: This gelling agent includes a compound expressed by general formula (1) [wherein, (n) and (m) are each an integer of 2 to 18; R<SP POS="POST">1</SP>and R<SP POS="POST">2</SP>are each 0-6C branched or linear alkylene; and Z is phenylene or biphenylene], and the gel obtained by using the gelling agent.
