A tray for simmering and drying anchovies according to the present invention, is characterized by comprising: a frame; a mesh body configured so that an edge thereof is supported by the frame, a concave-convex portion is formed along a longitudinal direction or along a direction perpendicular to the longitudinal direction, and a plurality of through-holes for draining water are formed; and a partition partitioning a region of the mesh body into at least two regions. According to the present invention, the tray for simmering and drying anchovies does not emit harmful substances even when a process of simmering anchovies is repeated because plastics emitting harmful substances are replaced. Also, according to the tray for simmering and drying anchovies of the present invention, anchovies can be prevented from being shifted to one side through the partition when the anchovy is simmered, both simmering work and drying work can be performed, a contact area with anchovies to be dried can be minimized through the mesh body including the concave-convex portion that has a shape such as a square wave, a sine wave and triangle wave to improve drying efficiency, and also, the partition is provided to uniformly distribute anchovies to be dried across an entire area of a drying rack, thereby uniformly drying the anchovies to be dried. |
