A method of treating chronic inflammation in a patient in need thereof, comprising parenterally administering to the patient a therapeutically effective amount of an aqueous solution of a purified modified pectin or a purified, deesterified, and partially depolymerized modified pectin, wherein the solution is substantially free of modified pectins having molecular weights below 25 kD.
