<p>The present invention relates to a collagen jelly manufacturing method using a pig skin. The present invention includes: (A) a step of cleaning the pig skin and removing hair from the pig skin; (B) a step of boiling the pig skin at a predetermined temperature in water mixed with a deodorizing spice and containing soybean paste, so the fat smell of the pig skin is removed; (C) a step of cooling the pig skin with cold water and removing the fat of the pig skin; (D) a step of aging the fat-removed pig skin at a predetermined temperature in water mixed with any one of pear juice, apple juice, and ginger juice, so the pig skin can be softened and flavored; (E) a step of boiling the aged pig skin at a predetermined temperature in water mixed with seasonings containing salted shrimps and bay salt, so the pig skin is flavored and gelatin is formed; (F) a step of grinding the pig skin in a grinder after step (E); and (G) a step of solidifying the ground pig skin in a fixed frame. The fat smell and odor peculiar to the pig skin are removed through the processing, and the pig skin is flavored and aged by various spices and condiments before the grinding and solidification. Accordingly, a soft taste of jellied food can be achieved for appetite by the gelatin produced during the boiling of the collagen-containing pig skin. Also, the pig skin has the shape of jelly, not a pig skin in general, and thus the appetite can be stimulated.</p> |
