The invention relates to the wine industry, particularly to a process for acidification of wine-making products with different destination.The process, according to the invention, comprises treatment of wine-making products with ion-exchange resins or electrodialysis with substitution of tartrate salt cations by hydrogen cations. At the same time, the wine-making products are preheated, and before or during the treatment process therein are introduced in excess and dissolved to saturation tartrate salts, predominantly cream of tartar. |
