GLYCOSIDASE ENZYMES

A thermostable glycosidase enzymes derived from various Thermococcus, Staphylothermus and Pyrococcus organisms is disclosed. The enzymes are produced from native or recombinant host cells and can be utilized in the food processing industry, pharmaceutical industry and in the textile industry, detergent industry and in the baking industry.

1. An isolated, synthetic or recombinant polypeptide having a glycosidase activity comprising:
(a) an amino acid sequence having at least 75%, 80%, 85%, 90%, 95%, 97%, 99%, or 100% sequence identity to the amino acid sequence of SEQ ID NO:16; or (b) an amino acid sequence encoded by a nucleic acid having at least 75%, 80%, 85%, 90%, 95%, 97%, 99%, or 100% sequence identity to the polynucleotide sequence of SEQ ID NO:2; or (c) enzymatically active polypeptide fragments having 75%, 80%, 85%, 90%, 95%, 97%, 99%, or 100% sequence identity to a portion of (a) or (b).
