A variable-frequency water heater and a control method and apparatus thereof. In the control method of the variable-frequency water heater, during an operation process of a compressor of the variable-frequency water heater, when a water temperature is increased, an actual energy efficiency ratio of the compressor is calculated, and a working condition of the compressor is detected when the compressor is operated, to obtain an original energy efficiency ratio that is pre-stored by the variable-frequency water heater and corresponds to the detected working condition; and when the actual energy efficiency ratio is greater than the original energy efficiency ratio, an actual operation frequency of the compressor is obtained in time, and the energy efficiency ratio and a frequency that are stored in the variable-frequency water heater and corresponding to the working condition are updated.
