The present invention provides an apparatus for cryocondensation of aromas comprising (i) a cryocondensation device having an inlet for an input gas arriving from a process for treating a food product and an outlet for a cryocondensed gas derived from said input gas, and (ii) an adsorption column for carbon dioxide which is connected to the inlet so as to remove the carbon dioxide from the input gas.
