<P>PROBLEM TO BE SOLVED: To provide liquid seasoning maintaining favorable flavor specific to allium vegetable such as garlic and raw Welsh onion. <P>SOLUTION: The liquid seasoning includes γ-glutamylpeptide, wherein the content of γ-glutamyl-S-(methyl)-cysteine accounts for 10-27 mass% of the total amount of γ-glutamyl-S-(allyl)-cysteine, γ-glutamyl-S-(2-propenyl)-cysteine, and the γ-glutamyl-S-(methyl)-cysteine. <P>COPYRIGHT: (C)2011,JPO&INPIT |
