PROBLEM TO BE SOLVED: To provide an effervescent food product including an effervescent coating composition with effervescent texture and durability formed around the outer periphery of an edible center.SOLUTION: The outer periphery of an edible center covered with concentrated aqueous solution of processed arabic gum sugar powder is covered with processed arabic gum sugar powder and dried in a first drying step, so that a precoated center is formed. The precoated center is covered with an acid/carbonate-blended arabic gum-suspended oil which contains a carbonate, an acid, and processed arabic gum sugar powder blended with a liquid oil having a melting point of 0°C or lower, and then with an acid/carbonate-blended processed arabic gum sugar powder which contains processed arabic gum sugar powder blended with an acid and a carbonate, and dried in a second drying step, so that an effervescent food product including an effervescent coating composition formed around the outer periphery of the precoated center is produced. |
