摘要 The present invention relates to a method for producing raw rice wine and the raw rice wine prepared thereby and, more specifically, to a method for producing raw rice wine and the raw rice wine prepared thereby. The method comprises the steps of: preparing seed mash by using grain as a main material, which is non-steamed or steamed using koji and yeast or using koji, malt, lactic acid, and yeast; adding koji, malt, enzymes or starchy raw materials to the prepared seed mash and brewing the raw materials; fermenting the raw materials brewed in the brewing step at a constant temperature for a certain period of time and aging the raw materials; homogenizing the raw materials aged in the aging step; controlling the growth activity of the yeast by applying thermal shock to the homogenized raw materials; and preparing rice saccharification liquid and adding the rice saccharification liquid to the raw materials.
