PROBLEM TO BE SOLVED: To provide a filling for frozen dessert, which is a non-sweet food material with a low saccharide content, for use as filling in combination with a frozen dessert served in a frozen state or chilled state such as an ice cream, a soft serve, an ice block, and a frozen yogurt, having a soft texture matching with the frozen dessert and flowable physical properties.SOLUTION: An oil-in-water type emulsion including 20 to 35 wt.% of fat having flowability at -20°C, 2 to 20 wt.% of protein, a salty raw material, and 5 to 20 wt.% of saccharide exhibits a soft texture matching with the frozen dessert and flowable physical properties in a frozen or chilled state. |
