The present invention relates to a method for preparing oat noodle, wherein noodle is prepared using oats so as to allow normal consumers intake rich nutriments contained in oats and enjoy the unique taste of oats by simple noodle cooking. The preparation method comprises: a soaking step of adding salt to warm water and adding grain to soak the same in water for 15-20 hours; a heating step of boiling the grain passed through the soaking step and water in a ratio of 1:1.4 for 70-80 minutes in a container; a hull separation step of separating and removing hard hulls from the embryo of grain through a filter net while grinding the grain passed through the heating step; a maturation step of kneading the embryo, from which the hulls are removed and which are ground through the hull separation step, and maturing the dough at 25℃ for 3-4 hours; a noodle-making step of making noodle by extruding the dough with a noodle-making machine; a reheating step of reheating the noodles which are processed through the noodle-making step, by steaming for 15-20 minutes; and a cooling step of cooling the reheated noodles by putting the same in cold water. |
