PROBLEM TO BE SOLVED: To provide a manufacturing method of shape retaining food products, and an electric heating device for the manufacturing.SOLUTION: The manufacturing method of heat retaining food products includes: electric heating a heat coagulating raw material which is continuously extruded; and molding the continuously moving heat coagulating raw material with shape retention properties imparted by electric heating. The electric heating is continuously performed in a closed space and a subsequent open space.
