The invention relates to a device (10), designed and configured for machine processing of beheaded and at least substantially gutted fish, transported tail-first in transport direction T on a transport path, comprising a conveying means (11) which conveys the fish along the transport path and a cutting device (12) for removing the meat from the flank bones (13, 13a) of the bone structure (14) of a fish after cutting the abdominal and spine spokes (15, 16) free, wherein the cutting device (12) comprises a pair of circular knives (19, 20), which can be driven rotating around a point of rotation D and which are arranged on opposite sides of the transport path and are designed to be adjustable relative to the position of the fish and thus to the bone structure (14), characterized in that each circular knife (19, 20) is allocated a means (21, 22) that is designed and configured to hold down at least some of the flank bones (13a) during the removal process of the meat from the bone structure (14).
