<p>PROBLEM TO BE SOLVED: To provide a preservative for food products, with which preservability for food products is safely and efficiently improved without deteriorating original flavor of the food products.SOLUTION: A preservative for food products containing chitinase as an active ingredient is disclosed. Based on this invention, proliferation of bacteria in food products is safely and efficiently suppressed without deteriorating original flavor of the food products, and as a result, preservability for food products in itself is improved. The preservative for food products obtained by this invention is useful in various fields such as food manufacturing and cooking.</p> |
