<p>PROBLEM TO BE SOLVED: To provide a method for producing a chitosan having a high deacetylation degree by an easier and safer method.SOLUTION: There is provided a method for producing a chitosan which comprises a step of deacetylating an acetyl group by bringing a chitin or a chitosan into contact with an ionic liquid consisting of a basic anion and water. The anion in the ionic liquid preferably has a pKb of 10 or more. In addition, the anion in the ionic liquid preferably is an acetate ion or a hydrogen carbonate ion.</p> |
