The present invention relates to a method for manufacturing jam using purple sweet potatoes, and to purple sweet potato jam manufactured by the same. The method includes the steps of: (a) grinding the purple sweet potatoes that are cut into small pieces and soaked in water; (b) glycosylating the purple sweet potatoes, ground in step (a), after adding a mixture of malt and water into the purple sweet potatoes; and (c) concentrating the purple sweet potatoes, glycosylated in step (b), after adding pectin and citric acid into the glycosylated purple sweet potatoes. |
