PROBLEM TO BE SOLVED: To provide a simple and low-cost manufacturing method of processed meat products having good texture without impairing the meat-like resilience and coarsely ground texture even though having a low calorie.SOLUTION: The manufacturing process of processed meat products including the step of adding an alginate and psyllium seed gum-containing gel composition to a raw material meat enables processed meat products having a good texture to be manufactured without impairing the meat-like resilience and coarsely ground texture. Alternatively, a gel composition composed of a plurality of gelatinized products having different concentration of alginate may be added to a raw material meat for achieving a better texture. |
