PROBLEM TO BE SOLVED: To provide a packed tomato-containing beverage imparting a fruit tomato-like taste and designed to have a high glutamic acid content while preserving sweetness and richness derived from tomatoes.SOLUTION: A tomato-containing beverage having a well-adjusted sweetness-umami balance, a high glutamic acid ratio, and a high Brix value is provided by adjusting, within a range of 55-100 mg/100 g, the γ-aminobutyric acid content of a tomato-containing beverage preserving a taste unique to tomatoes and then adjusting, within a range of 0.65-3.9, the weight ratio of the glutamic acid content with respect to contents of amino acids consisting of aspartic acid, asparagine, serine, glutamine, arginine, and alanine (glutamic acid ratio). |
