The present invention relates to a low-temperature vacuum concentration food fermentation device in which stirring action increases to efficiently ferment foods in a short time, and the fermented foods may be easily discharged. In detail, the present invention relates to a low-temperature vacuum concentration food fermentation device in which a stirring unit for stirring introduced foods has a spiral double-screw shape to push the foods in a direction opposite to each other, wherein the two screws have different outer diameters from each other to increase stirring efficiency and to allow a gate to be easily opened and closed, thereby easily discharging the fermented foods.
