[Problem] To provide a method for enhancing the red color tone of meat in a process of rearing farmed fish such as the Japanese amberback or tuna. Also, to provide a method for producing farmed fish the meat of which has an appropriate degree of firmness when prepared and processed for sashimi or the like. [Solution] Provided is a method of improving the meat quality of farmed fish, the method being characterized by feeding the farmed fish at least 0.1 mg/kg body weight of iodine per day. Improving meat quality refers to enhancing the red color of normal muscle and/or red muscle, increasing the myoglobin content of normal muscle and/or red muscle, or improving the texture of normal muscle. Also provided is a feed for farmed fish, the feed being characterized by comprising 10 to less than 1,000 mg of iodine per 1 kg of feed dry matter weight. |
