FIELD: food industry.SUBSTANCE: method envisages mixing of natural honey with crystalline glucose. Then one adds crystalline fructose into the produced mixture and performs further mixing. Then the produced mixture is dried by a combined radiation-convection method. Moisture evaporation from the mixture is performed by way of thermoradiation heating with infrared radiation with simultaneous moisture removal from exhaust air by way of forced convection of the steam-and-air mixture. Then the dry mixture is additionally milled till powdery condition. Then one introduces an additional portion of natural honey in proportion equal to 15 - 25% of the powder weight. Then one recurrently repeats the dry mixture drying and milling cycle with honey addition. As a result, natural honey content is conditioned to 70% of the total weight of powder. At the first stage of mixing, one takes 109.6-156.5 g of glucose and 133.7-191 g of fructose per 100 g of honey.EFFECT: invention allows to produce dry honey powder with increased natural honey content.2 cl, 1 dwg |
