THE MANUFACTURING METHOD FOR THE LIQUID TYPE OF BUCKWHEAT TEA COMPRISING INCREASED ISOQUERCITRIN AND NO SEDIMENT AT LOW TEMPERATURE

The present invention relates to a manufacturing method of liquid buckwheat tea which has an increased isoquercitrin content and does not generate sediment during cold storage. In particular, lutein, which exists in a buckwheat extract and has low solubility at low temperatures, is transformed to isoquercitrin by bioconversion using an Aspergillusspp strain. The transformed isoquercitrin is confirmed to have high solubility even at low temperatures, and thus is expected to be advantageously used for manufacturing the liquid buckwheat tea which does not generate sediment during cold storage.
