PROBLEM TO BE SOLVED: To provide a method for stably preparing a sourdough in a short period, without depending on the technique of skilled craftsmen and without influence from the environment.SOLUTION: A manufacturing method of a fermentation dough includes the following steps: (1) naturally fermenting a mixture of 100 pts.wt of mixed powder of grain flour other than wheat flour and wheat flour with a weight ratio of a grain flower or grain to wheat flour of 20:80 to 80:20 (preferably 30:70 to 70:30, more preferably 35:65 to 45:55); 0.01 to 5 pts.wt (preferably 0.1 to 1, more preferably 0.2 to 0.6) of yeast for bread; and an appropriate amount of water, and (2) further adding wheat flour and an appropriate amount of water to the naturally fermented product so as to be mixed and fermented. |
