a) at least one Streptococcus glucosyltransferase enzyme that synthesizes poly (alpha 1,3 glucan) from sucrose; b) boric acid; and c) sucrose,whereby poly (alpha 1,3 glucan) is produced with a lower concentration of leucrose by-product than is produced in the absence of boric acid. |
