摘要 The present invention relates to a functional food with enhanced antioxidant activity including a ginseng seed endosperm extraction meal, and a manufacturing method thereof. In particular, the manufacturing method includes the steps of: obtaining ginseng seed endosperm by separating the ginseng seed endosperm from ginseng seeds; manufacturing the ginseng seed endosperm extraction meal by heating and pressing the ginseng seed endosperm to remove oil; and manufacturing powder of the ginseng seed endosperm extraction meal by grinding the ginseng seed endosperm extraction meal. According to the present invention, a nutrition bar is manufactured using the ginseng seed endosperm extraction meal from which oil is removed by heat and pressure. Therefore, the nutrition bar having excellent palatability and enhanced antioxidant activity can be provided. Extraction meals are commonly disposed as waste. However, in accordance to the present invention, the food engineering value of the usage of the ginseng seed endosperm extraction meal from which oil is removed by heat and pressure is increased; applicability of the ginseng seed endosperm extraction meal as a functional material can be increased.
