The present invention relates to a manufacturing method of frozen fried food, and a device thereof. More specifically, the present invention relates to a manufacturing method of frozen fried food capable of maintaining the texture and flavor after thawing while reducing the time, convenience, ease and safety required for convenient prepared food in manufacturing frozen fried food such as pork cutlet (called tonkatsu), and a device thereof. According to the present invention, the manufacturing method of frozen fried food comprises: a step of removing moisture from a raw material; a step of molding the raw material into a form corresponding to a food type; a step of coating a batter by adding a betamix batter on the surface of the molded raw material and coating bread crumbs; a step of manufacturing fried food by inputting and deep-frying the raw material coated with batter in boiling oil; a step of inputting the fried food on a net conveyor into a moisture evaporating tunnel; a step of drying the fried food by evaporating moisture from the fried food by the surface evaporation by contacting with wind by force while transferring the fried food via the net conveyor in the moisture evaporating tunnel; a step of freezing the dried fried food; and a step of packaging the frozen fried food. |
