A fryer of the present invention comprises: an oil tank which has a top surface opened and maintained at a particular height and a bottom surface including a step pulley so as to include a front surface top end and a rear surface bottom end; a combusting unit which is the outside of the oil tank and is disposed at the bottom of the front surface top end; a plurality of heating pipes which penetrate through the front and rear of the rear surface bottom unit so that the front end thereof is disposed to face the combusting unit and the rear end thereof is connected with a discharge unit; a discharge unit which is the outside of the oil tank and is disposed to form a up and down space in the rear of the rear surface bottom end so that the bottom thereof is connected with the rear end of the heating pipe; and a dividing unit which is disposed in the discharge unit and divides the flow of exhaust gas in order to re-circulate a part of the exhaust gas at a position where the rear end of the heating pipe and the discharge unit are connected. The combusting unit is disposed at the bottom of the front surface top end of the oil tank so as to be directly heated. Moreover, a part of the exhaust gas is re-circulated in a position where the rear end of the heating pipe and discharge unit are connected so that heat is re-used and recovery power to an appropriate temperature of oil in the oil tank can be maximized. |
